Chef Franco’s restaurant experience is deep and diverse, formally beginning at age 14 when he started washing dishes at his family’s Italian restaurant. Drawn to the kitchen line;s intensity and the chefs’ passion, he started to work his way up the ranks. When he decided it was time to leave the family business to strike out on his own, he found that he had to work his way back up all over again. Along the way, he bussed and waited tables, made pizzas and tried an overnight baking stint, but found himself drawn back to the kitchen’s adrenaline rush so he moved back into various kitchen roles while also acquiring fine dining and plating techniques from talented chefs. In addition to Italian cuisine, his broad culinary background includes Cuban, American, French, Peruvian and steakhouse, as well as cursory knowledge of Japanese sushi. Chef Franco’s informal culinary education began when he was a child in Lima, Peru, where he enjoyed watching his grandmother bakes cakes every other day. He and his mother, previously an attorney for the U.S. embassy in Peru, moved to Naples when he was age 10 to pursue the “American dream” in a tranquil place to raise a family. From his experience living in a small Sicilian town where most of his family members worked in a wedding banquet hall down the road, Chef Franco was quickly immersed in Italian culture and cuisine. In fact, he likes to surprise Italian-speaking guests at D’Amico & Sons with his fluency in their language, in addition to his fluent English and Spanish.
